Lisa’s Chicken Salad

For those who feel adventurous enough to make a recipe without measurements, feel free to combine the ingredients at the ratios of your choosing. You may also add things such as diced apple, quartered grapes, sliced almonds, or anything else that you think will complement the ingredients.

Chicken (see package for oz.)
1 cup diced celery (about 5 medium stalks)
3 diced green onions
8 oz mashed avocado (weight)
2 oz fat free mayo (weight)
Seasoned salt
Celery seed

Cooking Instructions

Cook chicken in crockpot on high for four hours. Cool. Then shred with two forks. Meanwhile, dice celery and green onions. Combine cooled shredded chicken with avocado and mayo. Add salt and celery seed to taste.

Makes about 3 cups.

Serve 1/2 cup atop a bed of 2 cups raw baby spinach leaves.

(You can also try substituting plain Greek yogurt for the mayo.)
